This delicious recipe is so easy to make and can be modified to your liking! Do you have extra veggies in the fridge that you don't know what to do with? Do you like having a lot of protein in your meals to make you feel fuller? This recipe is definitely one to try! You can add as much or as little protein as you like. You can even leave out the protein all together and still have a delicious meal. Give it a try and let us know what you think!

Ingredients:

  • 2 tbsp of Canola Oil

  • 4 Assorted Bell Peppers (Can you more if you like bell peppers)

  • Sliced Mushrooms

  • 1 medium Onion

  • 3 cloves of garlic

  • 1/4 tsp of red pepper flakes (optional)

  • 2-3 Chicken Breasts, cut in half and thinly sliced (You want thin chicken strips)

  • Medium-sized shrimp (I use a precooked bag of 35/45 shrimp) - You can leave this out if you do not like shrimp or modify the amount if necessary

  • Beef Strips (You can use flank steak, strip loin or whatever beef strips you would like to use)

  • 1/4 cup Oyster Sauce

  • 2 tbsp Hoisin Sauce

  • Rice (Can use brown, white or basmati)

Directions:

  1. Prepare all of your veggies and meat choices. Thinly cut all of your vegetables into slices and prepare your meat by cutting it into thin strips.

  2. Heat up the oil in a wok or pot of your choice on medium to low heat. When the oil is heated, add your onions and garlic and cook until the onions are translucent.

  3. While waiting for your onions and garlic to cook, start cooking your beef, chicken and/or shrimp in a different pot. Cook them enough so they are no longer raw.

  4. Once you have cooked your protein of choice, add that to your onions and garlic and cook, covered, for another 3-5 mins.

  5. Add your bell peppers, mushrooms and any other vegetables you want to use into the pot.

  6. Add red pepper flakes (optional), oyster sauce and hoisin sauce and mix very well. You want to make sure all of your vegetables and protein is coated with the sauce.

  7. Cover and allow your stir fry to cook on low to medium heat for approximately 30 mins. You can adjust this time accordingly, based on how soft or crunchy you would like your veggies. - I personally like mine soft, so I cook it for the full amount of time. Covering the pot while cooking will also allow the veggies to give off some water and create the gravy in your dish.

  8. While your veggies are cooking, add rice to boiling water and cook to the desired softness and texture.

  9. Once your stir fry is at the desired softness, remove from heat and serve with your rice!

This dish is great because you can truly customize it any way you like! Have fun, experiment or enjoy it as is! Feel free to comment and let us know how it turns out!
